Add and apply EF Core migrations against BookingDbContext, including the one-time switch off EnsureCreated() so migrations own the schema.

API/ZachHairStudio.Api, run dotnet run. On first run it
creates Data/bookings.db (via EnsureCreated() until migrations are
adopted — see the ef-migrations skill). CORS allows any origin in dev.landing-page, run npm install (first time) then
npm run dev.dashboard/ has a Next.js app — run it on port 3001
so it doesn't collide with the landing page.http://localhost:5236/openapi/v1.json returns the spec.
