Flow 2 — HACCP-based food-safety plan
Walk the seven HACCP principles for the venue's actual flow (receiving → storage → prep → cook → hold → serve):
- Hazard analysis — biological (pathogens), chemical (cleaning agents, allergens), physical (glass, metal) at each step.
- Critical Control Points (CCPs) — typically: chilled storage, cooking temperature, hot/cold holding, reheating.
- Critical limits — e.g. cook to a safe core temperature; cold storage ≤ the required fridge temperature; hot hold above the required temperature. (Use the limits in your plan/AUV guidance — the skill leaves the exact °C as fields to confirm against current guidance, not invented numbers.)
- Monitoring — who checks what, how often (the logs in Flow 3).
- Corrective actions — what to do when a limit is breached (reject, discard, re-cook, recalibrate).
- Verification — periodic review, calibration of thermometers, records audit.
- Documentation — keep the plan and the logs.

- Confirm the temperature limits against current AUV guidance before printing the plan — don't hard-code numbers.
