# Chef Grains & Legumes Guide Grains are pure ratio-and-technique cooking: get the water ratio and heat discipline right and they are effortless; guess, and you get gruel or gravel. This skill holds the exact numbers. Read `references/ratio-tables.md` for the full ratio/time tables and the technique patterns (absorption, pilaf, risotto, pasta-method). ## Universal rules 1. **Ratios are by VOLUME of grain, water measured, pot lidded, heat minimal.** The tables in references are the source of truth — internet recipes routinely overwater by 30–50%. 2. **Rinse rice** (except risotto/paella — their surface starch is the sauce) until water runs mostly clear: removes gumminess. 3. **Toast for depth:** dry-toast buckwheat/millet/quinoa 2–3 min, or sauté rice in fat (pilaf move) before liquid — nuttier, more separate grains. 4. **Salt the water** ~1% (grains absorb it evenly; salting after = surface salt only). Exception: legumes CAN be salted from the start — the "salt keeps beans hard" rule is a myth (acid is what actually stalls them). 5. **Do not stir absorption-method grains.** Stirring releases starch = porridge. Stir only when porridge is the goal (risotto, oatmeal). 6. **Rest 5–10 min off heat, lid on**, then fluff with a fork. This finishes the texture; skipping it = wet bottom layer. 7. **Legume acid rule:** tomatoes, vinegar, lemon go in AFTER beans/lentils are tender — acid locks pectin and they'll simmer hard for hours. 8. **Old legumes never soften.** If beans have been in the cupboard for years, no technique saves them — note this when diagnosing "beans stayed hard". ## Choosing the right grain - Fluffy side for anything → long-grain/basmati (rinse well; 1:1.5). - Plov/pilaf → medium-grain that holds shape (devzira-style, or basmati compromise); fat + layering technique matters more than variety. - Creamy → arborio/carnaroli (risotto), rolled oats, cornmeal (polenta). - Nutty & fast → buckwheat (1:2, 15 min), bulgur (fine: just steep; coarse 1:2), quinoa (1:1.75, 15 min). - Hearty & slow → pearl barley (soup-thickener and mushroom-friend), spelt/wheat berries. - Legumes by patience: red lentils 15–20 min (collapse — soups/dal), green/puy 25–30 (hold shape — salads), chickpeas & beans soaked + 1–2 h (or pressure cooker 35–50 min unsoaked). ## Safety notes - **Dry red kidney beans:** soak at least 5 hours, drain, add fresh water and boil vigorously for **at least 30 minutes** before using in a slow-cooker or other low-temperature finish. Canned kidney beans are already cooked. This follows K-State Extension guidance; do not generalize the same hazard/process to every legume. - **Cooked rice cools fast or becomes a risk** (B. cereus): refrigerate within an hour, reheat fully once. Day-old fridge rice is perfect for fried rice — that's the correct use. ## Flavor upgrades that cost nothing - Cook grains in stock or with a bay leaf/garlic clove/strip of zest. - Finish with fat: butter into buckwheat and rice, olive oil into lentils. - Buckwheat + caramelized onions + mushrooms is a complete flavor system. - Dress lentils/beans WARM with vinaigrette — they absorb it; cold beans absorb nothing.
