Steps
1. Make and chill the base dough (détrempe)
Croissant dough ingredients (per 1 kg flour):
- Flour: 1 kg (bread flour, 11-12% protein)
- Sugar: 100g
- Salt: 20g
- Instant yeast: 20g
- Cold whole milk: 550g
- Butter (in dough, not for lamination): 80g
Mix until shaggy (do not over-develop gluten — over-mixed dough tears during lamination); flatten to a rectangle; wrap; refrigerate 4 hours or overnight. Target dough temperature: 40–45°F (4–7°C).
2. Prepare the butter block (beurrage)
Butter quality is critical: use European-style butter with 84%+ fat content (less water = fewer air pockets during lamination; less moisture = crisper layers).
Preparing the block:
- Place cold butter (straight from refrigerator) between two sheets of parchment
- Beat with a rolling pin to form a uniform 6×6-inch (15×15 cm) square, ½ inch thick
- Target butter temperature: 59–64°F (15–18°C) — pliable but not soft; should bend without cracking
If butter is too cold (cracks when bent): let sit 1–2 minutes at room temperature. If too warm (starts to smear): refrigerate 10 minutes.

3. Enclose the butter in the dough

4. Complete the turns (folds)

Letter fold (single turn):

- Fold top third down, bottom third up over it (like a letter)
- This is 1 turn; produces 3× layers each time
Book fold (double turn):
- Roll dough to a rectangle
- Fold both short ends to the center, then fold the whole thing in half
- This is 1 turn; produces 4× layers each time
Between each turn:
- Rotate 90° (open edge to the right before each roll)
- Wrap and refrigerate 30–60 minutes between every 1–2 turns
- Total chilling time: 2–4 hours across all turns
Mark the dough with fingerprints to track how many turns have been completed.
5. Shape and proof
After the final turn:
- Roll dough to final thickness: 3–4mm for croissants
- Cut: equilateral triangles (base ~5 inches) for croissants; rectangles for pain au chocolat
- Shape: stretch slightly at the base; roll from base to tip; curl tips inward for croissant shape
- Place on parchment-lined baking sheet; egg wash (do not get on cut sides — seals layers)
- Proof at 75–78°F (24–26°C) with humidity until visibly puffed and jiggly — 2–3 hours for croissants (cold dough proofs slowly)
6. Bake correctly
- Preheat oven to 400°F (200°C) — high heat produces rapid steam from butter
- Apply second egg wash just before baking
- Bake 15–20 minutes until deep amber; do not under-bake (layers will be gummy)
- The steam from butter water content inflates the layers during baking — this is the mechanism that creates the honeycomb interior
Common Mistakes
- Butter too cold (cracks during lamination): Cold butter shatters through the dough instead of forming sheets. Layers are inconsistent and the dough tears.
