Use the correct regional base — substituting French mirepoix for Italian soffritto is not wrong, but it uses butter and lacks the olive oil character that defines Italian cooking.

2. Prepare aromatics to the correct cut size

Cut size affects how quickly the aromatics cook and the texture they contribute:

• Large dice (1 inch / 2.5 cm): for stocks and long-braised dishes (several hours); will be strained out or will dissolve
• Medium dice (½ inch / 12mm): for soups and sauces where texture remains; will be present in the finished dish
• Fine dice (brunoise, ¼ inch / 6mm): for sauces and risotto where the aromatic dissolves into the sauce and becomes invisible
• Minced: garlic and ginger for stir-fries, marinades, and pastes; cook very quickly

Rule: the longer the cooking time, the larger the cut can be. The shorter the cooking time, the smaller the cut required to develop flavor.

3. Cook in sequence — sweat before browning

4. Build in sequence — aromatics by cooking time

Some aromatics burn before others are done. Add in order of cooking time:

1. Onions (slowest): first; need 5–7 minutes to soften and develop
2. Carrots and celery: add 2–3 minutes after onions; moderate cooking time
3. Garlic: add near the end of the aromatic stage (last 1–2 minutes); burns quickly; bitter when burnt
4. Tomato paste: add after aromatics; cook 2–3 minutes to caramelize and reduce raw tomato flavor
5. Fresh herbs: add last or after liquid (heat volatilizes their flavor rapidly)

The sequence protects delicate aromatics while allowing robust ones to develop fully.

5. Deglaze and build on the aromatic base

The aromatic base is the foundation — the dish is built on top of it:

• Add wine or stock to deglaze after aromatics are fully developed
• Add protein (meat, beans, vegetables) after liquid is added
• The aromatics provide background flavor while the primary ingredients provide character

In long braises: the mirepoix or soffritto will fully dissolve over 2–4 hours, becoming invisible but contributing fundamental flavor throughout.

Common Mistakes

• Adding garlic with the onions: Garlic burns (bitter, acrid) at the same temperature onions are just softening. Add garlic in the last minute of the aromatic stage.
• Skipping the sweat stage: Adding raw aromatics directly to liquid (no fat, no heat) extracts far less flavor than sweating them in fat first. The fat step is not optional.
• Using the wrong fat for the cuisine: Butter softens the character of an olive oil-based Italian sauce; extra-virgin olive oil burns at the high heat needed for Asian stir-fry aromatics. Match fat to tradition.
