Extract Brewing (Start Here)
What Is Extract Brewing?
Malt extract (liquid or dry) is concentrated wort that someone else has mashed. You rehydrate it, boil with hops, ferment, and package. Produces excellent beer with less equipment and time.
Your First Brew Day (5-Gallon Batch)
Step 1: Prepare (15 minutes)
- Gather all ingredients and sanitize all equipment that touches cooled wort
- Read recipe completely before starting
Step 2: Steep Specialty Grains (20 minutes)
- Heat 2.5 gallons water to 155-165F
- Place crushed specialty grains in mesh bag, steep for 20 minutes

Step 5: Cool the Wort (20-30 minutes)
- Cool to under 70F as quickly as possible (ice bath or wort chiller)
- Fast cooling reduces contamination risk and produces clearer beer
- Ice bath: Fill sink/tub with ice and cold water, stir wort occasionally
Step 6: Transfer to Fermenter (10 minutes)
- Pour cooled wort into sanitized fermenter
- Top off with cold water to 5 gallons
- Splash and stir vigorously (aerate - yeast needs oxygen to start)
- Take hydrometer reading (Original Gravity - OG)
Step 7: Pitch Yeast (5 minutes)
- Sprinkle dry yeast on surface or pour prepared liquid yeast
- Seal fermenter, attach airlock filled with sanitizer or vodka
Step 8: Fermentation (1-2 weeks)
- Place in consistent temperature location (65-72F for ales, 48-55F for lagers)
- Airlock should begin bubbling within 24-48 hours
- Do not open fermenter during active fermentation
- Primary fermentation: 7-14 days
- Take final gravity (FG) reading to confirm fermentation is complete
- ABV = (OG - FG) x 131.25
Step 9: Bottling (1-2 hours)
- Boil 3/4 cup corn sugar (priming sugar) in 2 cups water, cool
- Add to bottling bucket, siphon beer on top (mix gently)
- Fill bottles to 1 inch from top, cap
- Store at room temperature 2-3 weeks for carbonation

All-Grain Process Overview
Mashing (60 minutes)
- Heat strike water to ~165F (10-12 quarts per 10 lbs grain for typical infusion mash)
- Add crushed grain to mash tun, stir in strike water
- Target mash temperature: 148-156F
- Lower temp (148-150F): More fermentable, drier, lighter body
- Higher temp (154-156F): Less fermentable, sweeter, fuller body
- Hold for 60 minutes (insulated cooler maintains temperature)
- Mash out: Raise to 168F to stop enzyme activity (optional but helpful)
Lautering/Sparging (30-45 minutes)
- Recirculate (vorlauf): Draw wort from bottom, pour gently back on top until clear
- Begin draining wort into brew kettle
- Sparge: Rinse grains with 168-170F water to extract remaining sugars
- Batch sparge (simpler): Add all sparge water at once, stir, drain

The Four Ingredients
Water

Sanitation
The Golden Rule of Homebrewing
Everything that touches the beer after the boil must be sanitized. Contamination is the #1 cause of bad homebrew.
Sanitizing Protocol
- Clean first: Remove visible dirt, residue, labels with PBW or OxiClean
- Sanitize: Submerge or spray with Star San solution (1 oz per 5 gallons water)
- Star San contact time: 30 seconds minimum
- Do not rinse (despite the foam - "don't fear the foam")
- Sanitize: Fermenter, airlock, siphon, tubing, bottles, caps, hydrometer, thermometer, spoon - everything
What Does NOT Need Sanitizing
- Anything that goes into the boiling wort (boiling kills everything)
- The boil kettle
- Mash equipment (hot wort from mashing is not yet susceptible in the same way)
Fermentation Management
Temperature Control (The Biggest Factor in Beer Quality)
- Ale fermentation: 62-68F actual beer temperature (not ambient room temp)
- Note: Fermentation generates heat; beer may be 5-10F warmer than room
- Too warm: Fusel alcohols (harsh, solvent-like), excessive esters (banana, bubblegum)
- Too cold: Slow or stalled fermentation, sluggish yeast
- Solution: Swamp cooler (fermenter in tub of water with frozen bottles) or fermentation chamber (freezer + Inkbird controller)
Fermentation Timeline
- Lag phase (0-24 hours): Yeast adapting, no visible activity
- Active fermentation (1-4 days): Vigorous bubbling, krausen (foam) forms
- Conditioning (4-14 days): Bubbling slows, yeast cleans up byproducts
- Completion: Gravity stable over 2-3 days, krausen drops
Signs of Healthy Fermentation
- Airlock bubbling within 24-48 hours
- Thick krausen layer (brown foam)
- Beer smells yeasty but not foul
- Gravity drops as expected
Signs of Problems
- No activity after 48 hours: Yeast may be dead, temperature too low, or poor seal on fermenter

- Force carbonate in 24-48 hours (vs 2-3 weeks bottle conditioning)
- Adjust carbonation level precisely
- Easier to serve and share
- Less oxidation risk
- Initial investment higher but saves time long-term
Force Carbonation
- Transfer beer to sanitized, purged keg (fill keg with CO2 before racking beer in)
- Seal keg, set CO2 to 30 PSI, shake keg for 2-3 minutes
- Refrigerate overnight
- Reduce to serving pressure (10-12 PSI at 38F for most styles)
- Or: Set to serving pressure and wait 7-10 days (slower but more consistent)
