Why Cast Iron Works
PROPERTIES THAT MATTER:

- Emissivity: Radiates heat well (better than stainless for some tasks)
- Durability: Lasts literally forever with basic care
- Seasoning: Builds natural non-stick surface over time
- Versatility: Stovetop, oven, broiler, grill, campfire
WHAT CAST IRON IS NOT:
- Not great at heat conductivity (has hot spots - manage them)
- Not lightweight (that is a feature, not a bug)
- Not reactive when properly seasoned (bare iron reacts with acid)
- Not complicated to maintain (ignore the overcomplicated advice)
Seasoning Science
WHAT SEASONING ACTUALLY IS:
Seasoning = polymerized oil bonded to the iron surface at molecular level.
When oil is heated past its smoke point in a thin layer, it undergoes
polymerization - the oil molecules cross-link into a hard, plastic-like
coating. This is NOT a thick layer of grease.
KEY PRINCIPLES:
1. THIN layers (wipe until it looks like no oil is left)
2. Heat ABOVE the oil's smoke point
3. Multiple thin layers > one thick layer
4. Cooking with oil continuously builds seasoning
5. The pan will be ugly before it is beautiful - that is normal
Seasoning Methods
Initial Seasoning (New or Stripped Pan)
METHOD: Oven Seasoning
Materials: Flaxseed oil, grapeseed oil, or Crisco (all work well)
STEPS:
1. Wash pan with warm water and mild soap (yes, soap is fine)
2. Dry completely - put on burner on low heat for 2 minutes
3. Apply thin layer of oil to entire pan (inside, outside, handle)
4. WIPE OFF almost all the oil with a clean lint-free cloth
(This is the most important step - it should look nearly dry)
5. Place upside down in oven at 450-500F (230-260C)
6. Bake for 1 hour
7. Turn off oven, leave pan inside to cool completely
8. Repeat steps 3-7 three to four more times

COMMON MISTAKE: Applying too much oil → sticky, gummy surface.
If this happens: scrub off the gummy spots, re-season with LESS oil.
Maintenance Seasoning (Ongoing)
DAILY SEASONING THROUGH COOKING:
- Every time you cook with oil or fat, you add micro-layers of seasoning
- Best seasoning-building activities:
1. Frying bacon (the ultimate cast iron conditioner)
2. Pan-frying anything in oil
3. Searing meat
4. Making cornbread (oil + high heat)
5. Cooking with butter at medium heat
AFTER EVERY USE:
1. While pan is still warm, rinse under hot water
2. Use a stiff brush or chain mail scrubber to remove food
3. Dry on burner over medium-low heat for 1-2 minutes
4. Apply a thin wipe of oil (optional but recommended for newer pans)
5. Done. Store somewhere dry.
THAT IS IT. Do not overthink this.
Heat Management
This is where most cast iron users fail. Cast iron is NOT like stainless steel.
THE GOLDEN RULES:
1. PREHEAT SLOWLY: Start at low-medium, increase gradually over 5 minutes
2. NEVER use max heat unless searing on gas (and even then, rarely)
3. Cast iron HOLDS heat - you need less heat input than you think
4. Hot spots are real - rotate the pan 90° halfway through preheat

THE WATER DROP TEST:
- Flick a drop of water onto the preheated pan
- Sizzles and evaporates quickly: Ready for sauteing (medium)
- Dances and skitters (Leidenfrost effect): Ready for searing (high)
- Just sits there: Not hot enough, keep heating
Cooking Techniques
Perfect Steak
SETUP: 12" skillet, preheated 5 min on medium then 2 min on medium-high.
Oil: High smoke-point (avocado, grapeseed) - thin coating.
1. Pat steak completely dry (paper towels, both sides)
2. Season generously with salt and pepper
3. Lay steak away from you into the pan (avoid splatter)
4. DO NOT TOUCH for 3-4 minutes (build the crust)
5. Flip once. Cook 3-4 min for medium-rare (depends on thickness)
6. Last minute: add butter, garlic, thyme. Baste with melted butter.
7. Rest 5 minutes on cutting board.
THE CRUST SECRET: Dry surface + hot pan + do not move it = perfect sear.
If the steak does not release easily, it is not ready to flip.
Non-Stick Eggs
THIS IS THE CAST IRON TEST. If your eggs slide, your seasoning is great.
SETUP: 10" skillet, low-medium heat, 3-5 min preheat.
1. Preheat pan on LOW-MEDIUM (not medium, not high - low-medium)
2. Add 1 tbsp butter. It should melt and foam gently, NOT brown instantly.
If it browns immediately: too hot. Remove from heat, let cool 30 seconds.
3. Crack eggs into pan
4. Cook gently. Do not rush with high heat.
5. Eggs should slide freely when done.
IF EGGS STICK:
- Pan was too hot (most common cause)
- Not enough fat
- Seasoning needs more building (cook bacon and fatty foods for a week)
- Pan surface is rough (vintage smooth pans are easier for eggs)
Dutch Oven Braising
CLASSIC BRAISED SHORT RIBS:
1. Season and dry short ribs. Sear in Dutch oven in batches (do not crowd).
2. Remove meat. Sauté onion, carrot, celery in the fond (5 min).
3. Add garlic (1 min), tomato paste (2 min, let it darken).
4. Deglaze with wine, scraping the fond. Reduce by half.
5. Add stock until meat is 2/3 submerged. Return meat.
6. Bring to simmer on stovetop, then cover and move to 325F oven.
7. Cook 2.5-3 hours until fork-tender.
WHY DUTCH OVEN EXCELS:
- Even oven heat surrounds the pot
- Heavy lid traps moisture (self-basting)
- Can go from stovetop sear to oven braise in one vessel
- Thermal mass maintains steady temperature
Cast Iron Baking
CORNBREAD (the quintessential cast iron recipe):
1. Preheat 10" skillet in 425F oven for 10 minutes
2. Mix dry: 1.5c cornmeal, 0.5c flour, 1tbsp sugar, 1tsp salt, 1tsp baking powder
3. Mix wet: 1 egg, 1c buttermilk, 0.25c melted butter
4. Combine wet into dry (do not overmix)
5. Remove screaming-hot skillet from oven
6. Add 2 tbsp butter to skillet, swirl to coat
7. Pour batter into sizzling butter
8. Bake 20-25 min until golden and set
9. The bottom crust will be perfectly crispy

Troubleshooting Guide
PROBLEM: Sticky/gummy surface
CAUSE: Too much oil during seasoning, or oil not fully polymerized
FIX: Scrub with chain mail + hot water. Re-season with VERY thin oil.
PROBLEM: Rust spots
CAUSE: Moisture exposure, stored wet, seasoning worn through
FIX: Scrub rust with steel wool or salt + oil paste.
Wash, dry on heat, re-season affected area (or full oven re-season).
PROBLEM: Food sticking
CAUSE: Pan not hot enough, not enough fat, or rushing the cook
FIX: Preheat longer on lower heat. Add more fat. Be patient.
If chronic: do a round of oven seasoning to rebuild the coating.
PROBLEM: Flaking black bits in food
CAUSE: Seasoning built up too thick in layers (often from too much oil)
FIX: Scrub off loose seasoning. This is not harmful but is not ideal.
Prevent by always wiping oil very thin.
PROBLEM: Metallic taste
CAUSE: Cooking acidic food (tomatoes, citrus, wine) in under-seasoned pan
FIX: Build more seasoning before cooking acidic foods.
Well-seasoned pan handles brief acid exposure fine (deglaze with wine, yes).
Do not simmer tomato sauce for hours in a newer pan.
PROBLEM: Uneven cooking / hot spots
CAUSE: Cast iron conducts heat slowly and unevenly

FIX: Use less oil. Preheat more slowly. Some smoke is normal
when building seasoning - ensure ventilation.

3. 10" skillet - eggs, smaller meals, side dishes

Daily Care Simplified
THE 2-MINUTE ROUTINE:

THINGS THAT WILL NOT RUIN YOUR PAN:
- Soap (modern dish soap will not strip seasoning)
- Metal utensils (fine on cast iron, unlike non-stick)
- The dishwasher (do not do it, but if you did, just re-season)
- Cooking acidic foods occasionally
- Leaving food in it overnight (not ideal, but not ruined)
THE ONLY THING THAT ACTUALLY RUINS CAST IRON:
- Sustained water exposure (leaving it soaking in the sink for days)
- Thermal shock (cold water on a red-hot pan can crack it)
- Nothing else. Cast iron is nearly indestructible.
