The Safety Principles
FERMENTATION SAFETY RULES

6. BOTULISM AND FERMENTATION
Properly acidic ferments (pH below 4.6) are safe from botulism.
The lactic acid environment prevents C. botulinum growth.
Do NOT attempt low-acid ferments without proper knowledge.

Recipe: Sauerkraut (Beginner's First Ferment)
The simplest and most forgiving ferment. Two ingredients.
BASIC SAUERKRAUT
===================
INGREDIENTS:
1 medium head green cabbage (~2 lbs / 900g)
1 tablespoon non-iodized salt (about 2% of cabbage weight)
EQUIPMENT:
Cutting board and knife (or mandoline)
Large mixing bowl
Kitchen scale
Wide-mouth quart mason jar
Weight (small jar, bag of brine, or glass weight)
Cloth cover + rubber band
INSTRUCTIONS:
1. PREPARE (10 minutes)
Remove outer leaves (save one for later).
Quarter cabbage, remove core.
Slice thinly (1/8 inch or so).
Weigh sliced cabbage. Calculate 2% salt by weight.
Example: 900g cabbage x 0.02 = 18g salt
2. SALT AND MASSAGE (5-10 minutes)
Place cabbage in large bowl.
Sprinkle salt evenly over cabbage.
Massage and squeeze with clean hands.
Continue until cabbage is limp and liquid pools
at bottom of bowl (5-10 minutes).
3. PACK THE JAR
Pack cabbage tightly into jar, pushing down firmly.
Pour all liquid from bowl into jar.
Liquid should cover cabbage by at least 1/2 inch.
If not enough liquid, wait 1-2 hours (more will release).
If still not enough: add 2% salt brine (1 tsp salt per cup water).
4. WEIGHT AND COVER
Place saved cabbage leaf on top (optional barrier).
Add weight to keep cabbage submerged.
Cover jar mouth with cloth and rubber band (NOT a sealed lid).
Label with date and contents.
5. FERMENT
Place in a cool spot (65-75F / 18-24C) out of direct sunlight.
Check daily for first week:
- Press weight down to release air bubbles
- Ensure cabbage stays submerged
- Skim any kahm yeast (white film) if it appears
6. TASTE AND WAIT
Day 3-5: Taste. It will start to sour.
Day 7-10: Getting tangier. Good mild sauerkraut.
Day 14-21: Classic sauerkraut tang.
Day 21-30+: More complex, sourer flavor.
Ferment LONGER in cold temps, SHORTER in warm temps.
7. STORE
When flavor is where you want it, seal with a lid
and refrigerate. Lasts 6+ months refrigerated.
TROUBLESHOOTING:
Cabbage floats above brine --> Push down, add more weight
White film on surface --> Kahm yeast, skim it off (harmless)
Fuzzy mold (colored) --> If only on surface, remove and add brine.
If throughout, discard.
Too salty --> Ferment longer (bacteria consume salt over time) or
rinse before eating
Too soft --> Shorter ferment next time, or add tannin source
(grape leaf, oak leaf, horseradish leaf)
Smells putrid (not just sour) --> Discard. Something went wrong.
Recipe: Kombucha
KOMBUCHA (First Fermentation)
================================
INGREDIENTS:
1 gallon (3.8L) filtered water
8 bags black or green tea (or 2 tbsp loose leaf)
1 cup (200g) white sugar
1 SCOBY + 1-2 cups starter liquid (from previous batch
or store-bought raw unflavored kombucha)

1-gallon glass jar (wide mouth)
Cloth cover + rubber band
Pot for boiling water
INSTRUCTIONS:
1. Brew strong tea: Boil 4 cups water, steep tea 10-15 min, remove bags.
2. Dissolve sugar in hot tea. Stir until fully dissolved.

IMPORTANT: Tea must be below 85F/29C before adding SCOBY.

Shorter = sweeter. Longer = more vinegary.

SECOND FERMENTATION (Carbonation + Flavoring):
Pour kombucha into flip-top bottles, leaving 1 inch headspace.
Add flavoring (2-3 tbsp fruit juice, fruit pieces, ginger, herbs).
Seal bottles tightly.
Ferment 2-4 days at room temperature.
BURP BOTTLES DAILY (open slightly to release pressure).
WARNING: Pressure can build dangerously. Never leave unattended
for more than 3 days without burping. Use proper bottles.
Refrigerate when carbonation is achieved.
SCOBY CARE:
