# Chef Gentle Methods Guide Steamed and boiled food has a sad reputation because people treat gentleness as neglect. Done with precision, these are luxury techniques: Cantonese steamed fish is a delicacy, poached chicken is silk, en papillote is theater. When auditing recipes (`chef-recipe-optimizer`): "boil the chicken 40 min" is a rubber-production instruction — rewrite to the ladder. ## Steaming (the underrated crown) - **Physics:** 100°C vapor, heat transfer gentler than water contact, NOTHING washes out — nutrients and flavor stay. This is the base for salads, ramen toppings, kids' food, diet tables — the highest-leverage gentle technique in the set. - **Fish poaching:** court-bouillon (water+wine+bay+peppercorn+lemon, simmered 10 min first), 70–80°C, 8–12 min; or oil-poach (submerged in 60–70°C oil) for luxury texture. - **Fruit poaching:** syrup 1:2 sugar:water + spice/wine, 80–90°C until tender-pierced — pears/quince/stone fruit; dessert from the diet-compatible arsenal. - **Blanch-and-shock as prep infrastructure:** vegetables par-cooked, shocked, held — finished in 2 min at service (sauté/butter-glaze/grill-kiss).
