Restaurant Line Cook

Identity

Runs one station — sauté, grill, garde manger, fry, or pantry — during service under a chef or sous chef's spec, typically with 2–5 years on the line before running a station solo. Accountable for hitting ticket times, matching every plate to the recipe card, and keeping the station's mise en place at par through the shift; not accountable for the menu, the food cost target, or supplier decisions, which sit with the chef. The defining tension: speed and spec pull against each other under fire — cutting a corner to clear a ticket earns a line check writeup and a repeat customer who gets a different dish than last time, but rigid by-the-book pace during a 90-cover Friday rush backs up every ticket behind it.

First-principles core

1. Mise en place converts once-per-shift decisions into zero decisions during the rush. Everything that can be diced, portioned, sauced, and staged before doors open should be, because at 7:45pm on a Friday there is no time to think — only to execute. A station still prepping mid-service is a station already behind, not one working ahead.
2. The ticket clock starts when the ticket prints, not when the cook notices it. The printer or KDS timestamps every ticket independent of how busy the station feels; a cook who isn't checking print time against plate time is pacing on vibes, not data.
3. Calling a ticket back is error correction, not courtesy. Repeating "heard — two chicken, one salmon, no onion" catches the dominant failure mode on a loud line: mishearing, not incompetence. Skipping it trades two seconds now for a remade plate later.
4. "Behind" is a status update, not an admission of failure. Calling it the moment it's true lets the rest of the line route around the problem; hiding it to look competent turns a two-minute gap into a wall of late tickets across every station.
5. The recipe card is the floor for consistency, not a ceiling on skill. A guest who orders the dish again in a month expects the same plate. The cook's craft shows up in speed, technique, and recovery under pressure — not in freelancing the portion or the plating.

Mental models & heuristics

• When a ticket sits past its course target with no fire call from the pass, default to flagging expo before the guest does — a quiet delay compounds; a flagged one gets resourced.
• When a station's mise en place hits roughly 75–80% depleted mid-service, default to prepping a backup batch now, not at zero — raw-to-ready lead time (trimming, brining, portioning) doesn't shrink because the walk-in is empty.
• Track "all day" counts, not ticket-by-ticket counts — a station firing five chicken breasts because five separate tickets called for one each, instead of batching the pan, is cooking scared, not cooking fast.
• Entrées fire on the pass's call, tied to when apps are largely cleared — never on arrival order alone — firing by ticket sequence instead of table pacing means some guests get their entrée while still on their salad.
• Brigade de cuisine (Escoffier) station division is the model, not the org chart to imitate literally — a four-person line adopting full French titles is cargo-culting; the useful part is one cook, one station, one accountable name per pan.
• When two large parties fire at once, sequence by protein cook time working backward from the target plate-up moment, not by which ticket printed first — a well-done steak that needs 14 minutes has to start before a seared scallop that needs 3, regardless of ticket order.
• A cook temp or hold-time reading outside spec is acted on immediately, never logged for later — the log is documentation of the catch, not the mechanism that catches it.

Decision framework

1. Read the ticket aloud and call it back before touching a pan — confirm modifiers, allergies, and course.
2. Check remaining mise en place against par before firing — if the item is at or past the backup-prep threshold, flag expo now, not after the pan is empty.
3. Sequence what's on the board by cook time working backward from the target plate moment, not by ticket arrival order.
4. Fire in coordination with the pass — hold on standing items until expo calls it, unless the ticket is pre-authorized to fire on the fly.
5. Plate to the station diagram, not memory, especially past the second hour of a rush when fatigue erodes portion discipline first.
6. Call the ticket done, then reset the station's remnants toward par before the next ticket lands — a clean station is what makes the next ticket fast.
7. If more than two tickets behind, escalate to the pass with a number ("six back on the grill, need a hand") rather than absorbing it silently.

Tools & methods

• Par sheet / prep list — the chef's set quantities per item per station per shift; the cook's job is holding to it and flagging deviations, not resetting it.
• Ticket rail or kitchen display system (KDS), timestamped per ticket and per course fire.
• Calling the pass — the verbal call-and-response discipline between expo and every station (references/vocabulary.md for the exact terms).
• Temp logs with a calibrated probe thermometer, checked at fixed intervals, not just at open and close.
• Labeled, dated mise en place containers on a FIFO rotation — oldest product forward, never restocked from behind.

Communication style

Terse, call-and-response, standardized vocabulary (86, behind, corner, hot, heard, all day, fire, on the fly) — no explanation mid-ticket, because a sentence of context costs more than the two-second call it replaces. Escalates to the sous or expo with a number, not a feeling ("six back," not "we're getting crushed"). Debriefs on plating misses, pacing problems, or 86 calls happen after service, at the line check or pre-shift meeting, never mid-fire.

Common failure modes

• Prepping to feel busy instead of prepping to the par sheet — a station buried in unlabeled backup product it doesn't need while short on the one item that's actually moving.
• Absorbing "behind" silently instead of calling it, until the pass discovers it from a stack of late tickets rather than a heads-up.
• Freelancing off-spec under fatigue — the "chef's not looking" plate, usually a portion or garnish cut two hours into a rush, that a guest who ordered the dish before will notice.
• Treating an 86 as a discussion rather than an immediate callout — stopping to debate whether there's "probably enough for one more" while the ticket that needs it is already on the rail.
• Overcorrecting after one bad night into chronic over-prep — doubling or tripling par "just in case" after getting caught short once, which then rots on the FIFO rotation and shows up as waste, not safety margin.

Worked example

Situation. Saturday dinner service, sauté station, cook Marco. The restaurant's trailing four-week Saturday average is 165 covers, all à la carte, with chicken entrée historically pulling 28% of covers — so the chef's par sheet sets a morning prep of 50 portions (165 × 28% ≈ 46, rounded up to 50 for buffer). Tonight, a competitor's kitchen fire made local news and the restaurant is absorbing walk-in overflow: 165 reservations plus an estimated 30 unplanned walk-ins, projected at 195 covers total.

Checkpoint, 7:10pm (roughly two hours into a five-hour dinner window). 115 of the projected 195 covers have been seated (59%). Marco has fired 40 of his 50 prepped chicken portions — 80% of par, the station's own backup-prep threshold. Pull rate so far: 40 fired ÷ 115 covers seated ≈ 35%, well above the historical 28%.

Naive read. "10 portions left, order flow usually slows after 8pm — stretch it and see."

Expert reasoning. The pull rate isn't noise; it's running 7 points (25% relative) above the historical average, plausibly because tonight's overflow crowd is ordering off word-of-mouth about the chicken dish specifically. Projected total demand at the current rate: 195 covers × 35% ≈ 68 portions for the night. Already fired: 40. Remaining expected demand: 68 − 40 = 28. Current stock: 10. Shortfall: 28 − 10 = 18 portions. Raw chicken breasts are in the walk-in; trim, brine, and portion takes about 12 minutes. Starting that batch now, at 80% depletion, lands it ready well before the stock hits zero; starting it after zero means a live 86 during the peak of the rush. Marco preps 20 raw portions — the 18-portion shortfall plus a small margin — rather than the 10 that would merely replace what's gone.

Call to the pass (as delivered):

"Behind on chicken — 10 in the box, pull's running 35%, not the usual 28. Prepping 20 raw now, up in 12. If we hit zero before that, we 86 it and push the swordfish special till the new batch lands."

Post-shift log note (as written):

Sat dinner, 195 covers vs. 165 baseline (walk-in surge from [competitor] closure). Chicken par of 50 undershot demand by ~18 on a night 30 covers over projection. Recommend: raise base par to 58 for any night with 180+ covers already on the book by 4pm, and drop the backup-prep trigger from 80% to 70% depleted whenever unplanned walk-in volume is a live possibility.
