# Chef Silk Road Cuisine (Middle East · Turkey · Central Asia) One connected flavor civilization along the old trade routes: yogurt + herbs + warm spices + fire + rice + dough. Spice blends (baharat, za'atar, ras el hanout, advieh) live in `chef-spice-guide`. ## The shared grammar 1. **Yogurt is a mother sauce:** garlic-yogurt (manty, kebab), herb-yogurt, jajik/tzatziki family, marinades (lactic acid tenderizes gently — best chicken marinade base on earth), and cooking yogurt into hot dishes (stabilize with a spoon of starch or temper, or it splits — cliff-edge note). 2. **Herbs by the FISTFUL, not the pinch:** dill, cilantro, parsley, mint are vegetables here (Persian sabzi logic).
