Steps

1. Understand chocolate crystal structure

Cocoa butter crystallizes in 6 forms (I–VI). Only Form V (beta crystals) produces professional-quality chocolate:

• Form V: glossy, snappy, melts at 32–34°C (body temperature) — this is the target
• Forms I–IV: soft, matte, low-melting — undesirable
• Form VI: dull, grainy — occurs from over-aging

Tempering is the process of creating Form V crystals and eliminating all others.

This requires: melt all crystals → cool to nucleation temperature → maintain working temperature.

2. Select chocolate by type and understand temperature curves

Different chocolate types have different tempering temperature curves:

White and milk chocolate contain milk solids that reduce heat tolerance — lower working temperatures required.

Use a chocolate thermometer (instant-read or infrared) — temperature deviations of 2°C derail the process.

3. Seeding method — recommended for beginners and high-volume work

The seeding method introduces pre-crystallized Form V chocolate into melted chocolate:

1. Melt 75% of the chocolate to the melt temperature (see chart) using a double boiler or microwave (30-second intervals, stirring between each); confirm fully melted with thermometer
2. Remove from heat
3. Add 25% finely chopped or calletized (chip-form) chocolate as seed material — this seed chocolate is already in Form V crystal structure
4. Stir constantly until seed melts and the mixture cools to the working temperature (31–32°C for dark; see chart)
5. At working temperature: test with a knife — spread a small amount on a cool surface; it should set in 3–5 minutes with gloss and no smearing. If it sets cleanly with a matte surface = over-crystallized; reheat slightly. If it doesn't set = under-crystallized; add more seed.

4. Tabling method — for purists and small batches

The classical tabling method manipulates temperature through marble contact:

1. Melt chocolate to working temperature
2. Pour 2/3 of the batch onto a cool marble slab
3. Using a palette knife and bench scraper, spread and fold the chocolate continuously — this creates movement and accelerates crystal nucleation through cooling
4. When the chocolate on the marble drops to 28°C (dark) and begins to thicken, scrape it back into the remaining 1/3 batch
5. Stir; check final temperature (should be 31–32°C for dark)

Tabling is labor-intensive but produces extremely well-tempered chocolate. Professional confectioners use both methods depending on batch size and context.

5. Work at correct temperature and speed

Tempered chocolate is only usable at its working temperature. Below that, it begins to thicken and eventually sets:

• Keep at working temperature using a warm water bath or heating pad (set to lowest setting) beneath the bowl
• Work quickly once you begin dipping or molding
• If chocolate thickens: slowly warm to working temperature; test again before continuing

Molding: pour into polycarbonate chocolate molds; tap to release air bubbles; scrape level; allow to crystallize at room temperature (18–20°C / 64–68°F) — refrigerating can cause condensation bloom.

Common Mistakes

• Skipping the thermometer: Guessing temperature by touch or appearance reliably produces untempered chocolate. A $15 digital thermometer is non-negotiable for tempering.
• Any water contact: A single drop of water in chocolate causes seizing (immediate thickening into a grainy mass). All equipment must be completely dry before contact with chocolate.
• Refrigerating too fast or too cold: Fast chilling causes sugar bloom (condensation) and can trap incorrect crystals. Set at room temperature (18–20°C), not in the refrigerator.

When NOT to Use

• Chocolate for baking batters, brownies, or ganache: melted untempered chocolate is correct for these applications — tempering is only required when the chocolate will be displayed as a finished surface (dipping, molding, decoration).
